Import CSV to write EXIF/IPTC - do not copy, template for what fields to use, will not write?

I am first time user of the free tool.

This is what I have done.

Used export to create a CSV with data from one photo.

Edited CSV to name of test.jpg image - no other changes to the file  (it has no metadata)

When I go through Import steps it recognises the 69 fields and finds the file to write to. (see screenshot)

Issue 1 

rather than displaying all fields in CSV many are listed as Do Not Copy (including the obvious Latitude and Longitude).

Issue 2

The "do not to copy" fields do not show up in the dropdown list - so there is no way to write them.

Issue 3 (Assuming issue 1 is resolved)

Surely I should not have to go through this long list of drops every time I want to write data? 

Is there a way to Import ALL, or better still, load a tamplate of fields to update.

Issue 4

When I do not try to udate the Do Not Copy fields, and click OK it goes through the uodate process on screen then returns "no items match our search criterea)

No data is written.

Any help would be appreciated
